Carbonic Syrah!!! 2019 Destiny Ridge Vineyard
In the cellar each year during harvest, we push the limits of comfort in our processes in hopes to create wines that maximize the essence of place and deliciousness. A small amount of carbonic fermentation is an integral part of our annual red winemaking through the use of whole clusters. By not breaking berries, nor inoculating with commercial yeasts, the first few degrees of alcohol are achieved inside the berries. As fermentation begins within the unbroken berries, they begin to fill with CO2; that pressure – compounded with the weight of grapes above – cause the grapes to burst. Once they’ve burst or have been crushed, the natural yeasts from both the vineyard and those that live in our winery take over, consuming the sugars and converting them to alcohol.

What is Carbonic Fermentation?
In classic French regions, most notably Beaujolais, carbonic fermentation is de rigueur. In Beaujolais, whole clusters of Gamay are gently placed in a closed fermentation tank and the tank is sealed. Under a blanket of CO2, the grapes begin to ferment within themselves and slowly begin to burst under their own pressure and weight. The now juicy slurry continues to ferment, resulting in a wine that is lower in tannin and vibrant with juicy fruity character. The wines are bottled sooner than most reds to capture their vibrancy (versus the roundness that extended time in a barrel creates).

We love these wines and their innate crushability. Serve with a chill on a warm day and the wines are confoundingly refreshing. At cellar temperature, they feel richer and denser but are still bright on the palate. We challenge you to find a better red wine for Thanksgiving, light spicy foods, and even with fish. Serve carbonic-style wines at the dinner table or drink them on their own.

In 2019, for the first time, we followed this classic technique with 1 1/2 tons of Syrah in a single closed steel tank. Following fermentation, the wine was briefly aged in neutral oak and stainless steel, we bottled with very, very low SO2 to preserve the wine’s immediate pleasure and to not mask the techniques used in making it. The resulting wine is delicious! The lack of coarse tannins coupled with its fresh acidity and vibrant fruit make this a delicious departure from the structured and firm tannins found in many of our wines. Though inspired by the wines of  Beaujolais, our carbonic syrah resonates with Destiny Ridge vineyard aromas and flavors, but with a freshness and gulpability that is unlike anything we’ve ever made before. We hope you get to enjoy it for the short moment it is available.


The Label
This wine does not fall in-line with our traditional style at W.T. Vintners and we felt it needed a label unto its own. Our friend, Seattle artist Chris Crites, creates dynamic portraits, often from antique mugshots, painted in incredible detail with vibrant colors on paper bags. In addition to his portraits, his other works often capture moments of tragedy and calamity around the world. His attention to detail mirrors our fanatical approach to each moment of the winemaking process and makes him a perfect fit to collaborate on a label for this wine and hopefully future experimental wines.

Winemaking
Vineyard: Destiny Ridge, Horse Heaven Hills
Winemaking: 100% Syrah, 100% whole cluster, 100% Super Delicious!, spontaneous fermentation,
fermented 24 days in a sealed steel tank, gently pressed, and aged 4 months in old oak and stainless steel. Bottled with a scant 14ppm SO2. 60 cases produced. That’s it.

Things will look a little different, but we are thrilled to be reopening the grotto couches, tables, and (when weather permits) the patio. Per King County guidelines, parties are limited to a maximum of 5 people. We have taken precautions outlined by the CDC to ensure the safety of both our team and our guests and everyone’s safety seating is very limited.

Reservations – Priority will be given to pre-booked reservations. For the moment same-day reservations are not available, please book ahead. Book a visit with us.

Walk-ins – We will do our best to accommodate walk-in guests and weather permitting the patio doubles our seating capacity.

Tastings – Our daily health screened, masked, and gloved team will pour a flight of 5 wines selected by our winemaker each day. Alchemists Guild members will receive a sixth tasting glass of a library wine or Alchemists Guild exclusive bottling. We ask that tastings are limited to 45 minutes to honor upcoming reservations. Pre-booked reservations will take priority over walk-ins. Masks are required for all when in our “lobby” and when not seated. Hand sanitizer will be bountifully available. We are taking every step to ensure your and our team’s safety.

Wine by the Glass and Bottle will be available when the Patio is open to ensure we have enough tables for extended stays and to honor our reservations.

Food – We are working on a selection of Charcuterie and Cheeses to offer in a safe manner ASAP.
